I have personally never been a fan of running double stamina trinkets. I guess it's a throwback to TBC when there really weren't a lot of stam trinket options, I don't know. I have the stamina trinket off of Yogg and the dodge one off of Ignus (Furnace Stone is only rated slightly less than Gossamer), though when 25 man Ignus decides to drop his Stamina trinket again I might end up going Yogg/Ignus double stamina. It will be just too much health to pass up.
For me it just happened to be the order that I got my trinkets. I'm not a JC so never had the option for those trinkets. I got my Gossamer and the Valor Medal trinket at about the same time. I switched between the Valor Medal trinket and the HoL Defense trinket depending on what stats I needed. I eventually got to the point where I never needed the Defense trinket, then I got the Furance Stone from Ignus to replace the Valor one. Had I gotten the Yogg stamina trinket first, I might have gone Royal Seal and Gossamer together... I don't know.
It's up to you though. I think double stamina might be a good choice for you still. Honestly, more stamina makes you easier to heal than more avoidance. Maybe once you are super comfortable with the instance you can switch to more avoidance, but in the end it really doesn't matter a whole heck of a lot.

Hmm your avoidance is a tad low, but you'll get higher with better gear. I use to run with a lot of avoidance, but I found that it just leads to damage streaks that the healers have to account for. Now I run with more health on my gear, though my avoidance is pretty decent.
If I were you, I would run with both stam trinkets. You can get through most of Naxx and even Ulduar with more health, and just swap out to higher avoidance for certain fights. If you were the OT's for Patchwerk then I would swap in your avoidance gear for that fight.

for ulduar, use the stam trinkets - at least until you get the furnace stone from ignis. the only fight where i might go with avoidance over stam would be vezax.
don't count your JC gems as part of the stam you get from the trinket, since you would just move those to other gear if you replaced it. in fact, you're much better off with those gems in red sockets.
all that said, your avoidance is pretty low for going into ulduar; are you going to be MT or OT?

it's actually not a bad idea to put your JC gem in the crab, just don't count it when comparing it to other trinkets since you can always move the JC gem if you lose the trinket (does that make sense?)
good move on the ring change.
foolproof strategy for ignis:
raid stands in the center of the room between the pools. one tank moves ignis around a rectangle dropping a scorch patch at each point. just keep moving clockwise, "0" is scorch point. dps barely has to move, just keeps rotating.

second tank + one helper (moonkin is best, mage is ok) does adds. tank moves them to scorch patch and helper roots (or frost novas) them. run out, wait for molten, charge back in, reestablish threat and kite to the pool. helper shatters. repeat. after some practice, you will be able to do the adds without the CC, but it sure makes the fight easy when you're learning it.
warriors are awesome add tanks for this fight due to our mobility and stuns.

A lot of people use the four-point method, popularized by the tankspot videos I think.
I always MT Ignus and do things a little differently.

The hashes denote the middle band that's between the two pools. Ignus stands in the center and doesn't hardly move. I drop the first Scorch in the middle, then strafe to the right. I wait there and drop the second Scorch, then run through him and have him facing spot number 3. Just as he's dropping his third scorch the original one is disappearing or has just disappeared, so I move back to spot 1 and continue.
I guess the "benefit" of this method is that melee DPS doesn't have to run around in a circle chasing after me as I kite it. I'm not saying my way is necessarily better, just that it's a bit different and works quite well for us.

true, that works just as well.
any ignis position is fine as long as the raid knows where he's going. it's the add tank that's the key to this fight (plus it's way more fun to tank the adds). my moonkin buddy and i worked out the stun/root/shatter teamwork when we were first learning this fight. i don't use roots anymore, but it's a good strategy for those just working on ignis.
