Second Profession for Resto Shaman

Hey,i have maxxed out skinning in my resto shaman,and very low mining.i want to replace mining and get something else.any suggestions?
PS:money isnt much of an issue,i have an epic flying mount and whatnot,but i'd like it to be as little costly as possible.

If you don't have other gatherers to feed crafting professions, I'd say Tailoring isn't bad. You get the cloak enchant that can proc for +400 mana (starting in 3.2) similar to the Insightful Earthsiege Diamond. It doesn't give as good a benefit as other crafting profs, but you won't have to live in the auction house to get ore for JC or something.
On the other side of that, with Imp Water Shield being able to proc off Chain heal in 3.2 (and not consuming orbs), I could also see resto shamans being infinite mana and not need the cloak enchant. With CH glyphed, I generally crit about 2 times per CH in a raid.
Enchanting is a viable alternative. It doesn't require a gathering prof either, you can go strictly off the AH for greens to get mats (and sell some back). That will come to an extra 46 spellpower from ring enchants (after 3.2. Currently it would be 38).

With skinning the obvious choice would be leatherworking.
All profession bonuses are equal so it doesn't really matter which one you take. LW will be nice, enchanting also is easy to lvl (just solo a few low lvl instances) and provides some convenience when you get new gear and money (through disenchanting) when upgrading gear.
