I'm currently thinking of switching to an unhitable build on my gear. Currently after looking at my avoidances and adding the 30% from holy shield i come to a total of 91.13% avoidance. So in trying to come up with a gear/gem combo to reach 102.4% i came across this website and this is the link to my character on this website

according to this website i have 72.41% avoidance without holy shield and would equal 102.41% with holy shield. This is of course the unhitable point and i would like to know where the extra 11.28% comes from. If this website is correct then my build is perfect and i should continue to stack stamina but if not please let me know.

You still get hit, it's just that anything that isn't missed/dodged/parried will be lowered by block. You still take significant damage.
By "extra 11.28%" are you referring to your chance to be missed?

Keep in mind that Miss is hit fairly hard by diminishing returns, and your character sheet only provides the value before it.

You're using warcrafter. Their function for diminishing returns isn't always accurate. Don't rely on it.
Still, with all that block rating, you're still block capped even without raid buffs. Your pure avoidance is still fairly low for your gear level, however. I'd focus more on getting dodge rating to replace some of that block rather than stamina if that were my main tanking set. In particular, I'd be looking to replace the boots and legs.
