Actually, the Mantid would be a far closer corollary to the Mongols; being highly mobile raiders who launch periodic assaults from beyond a great wall.
I do think Entropy is correct, though, in that the game is simply influenced by our own history and stories.

Well a quick wiki search reveals the chinese Shang dynasty (Shang, Shen, not dissimilar), and there was an actual Li Shen, who rose from a minor court official to the position of Chancellor.
Everything is inspired from something. There hasn't been an original thing under the sun for ages (bar genetic tinkerings in laboratories).

Just based on the dialogue the Trolls are modeled after the populations of the Caribean islands, Jamaica, etc.
A small of piece of WoW lore and history, In The Barrens there is The Shrine of the Fallen Warrior. Which is a dedication to a Blizzard employee, an artist, who died unexpectedly very early in WoW's developemnt.
