Am I right in thinking it would be strange for a paladin or priest to practice enchanting, considering it is one of the schools of arcane magic? As I understand it, arcane magic encompasses pretty much all forms of magic except the divine, which is where paladins and priests draw their magic from.

Not really...since you know, one of the races that can be those classes are the original Magical Race(the Blood Elves) and another race had an entire civilization that had mastered all forms of magic thousands of years ago(Draenei), another race has a direct connection to their Goddess but at the same time also has a time honoured tradition of messing with Magic(Night Elves).
Or you know, just use the gameplay story segregation aspect for professions.

I figured the high and blood elves (or any race) would have to draw from one source of power in lieu of the other.
But yeah, enchanting/tailoring is too good of a combination to pass on for my priest anyways.

Well, the night elves didn't traditionally appreciate arcane magic. Malfurion Stormrage exiled the high elves that would become the blood elves (and thereby removed their immortality) because of their obsession with arcane magic.
The Draenei holy mindset didn't occur until recently (if my memory serves me correctly), when the sha'tar arrived and brought order and the Light to Shattrath and draenor. So, whether or not they had at one point mastered many forms of magic isn't correlated with their holy stance, since that came later.
@OP: I think it's an interesting consideration and I could see it affecting RP-related decisions when creating a character. I would think that any adherent of the Light would opt for "blessed" equipment over "enchanted" equipment.
I believe that arcane magic is its own kind of neutral element, otherwise an arcane mage would likely be able to use multi-elemental spells.

Not Holy
Divine
Holy refers to the light (Ie. the overarching force of good in this universe). while divine refers to other religions as well.

Well, don't Catholics believe their clergy can bless inanimate objects? And isn't this frequently a power available to Clerics in a lot of fantasy settings?
Just re-contextualize it as blessing the weapons and armor with holy power; achieving the same ends by different means.
Reason for edit: realized the original wording kind of sounded like I was calling Catholicism a fantasy setting, and I wanted to head off any misunderstandings.
