i have BS for sockets and JC for gems on my main but thinking about dropping JC now, cuz it sucks for PVP.

Engineering because It's the best profession for a casual player, no need to ever see a city again, repair, vendor, teleporters, it's amazing for people who don't bother to get into hardcore raiding or pvp.

I've got engineering and alchemy maxed right now, switched from herbalism to engineering after Cata and haven't regretted it since. Even goblin glider alone was worth it, englineering overall is a ton of fun for me, same for alchemy with all the cool effects some creations give. Discovery process also feels very rewarding, the feeling is nice. Not sure why everyone's forgettting secondary profs either. I've been maxing my fishing ever since i fished up my Crawdad in TBC, it's been a surprisingly fun profession to have. I only leveled cooking for the buff food though, and the hope of someday getting that Cake recipe, but i've been slacking on that front.

On my main i chose the professions for the stats (jc +bs) even though shes a rogue (find it odd how many people think its wierd a leather wearer having bs but since everything is boe). I do however utalise it and sell alot of pvp gear and gems so the whole leveling cost over the years has more than paid for itself
On my alts I have most crafting professions maxxed (still need to get mining, skinning and engineering for the achievements, im just so lazy :P), purely for the gold making potential. I sadly enjoy playing the auction house, as it gives me the gold to buy pretty things for my main
The only profession I have multiples of across my chars is enchanting as i mainly lvl through dungeons and find it alot more convinient than a 'proper gathering profession' (although I guess enchanting counts as both as your gathering your mats and you can make scrolls)
Never understood the appeal of gathering professions, I would much rather pay someone to gather materials for me and factor that into my final prices (also tend to find you make alot more gold per hour that way), would take me all day to grind the mats to make as much as an hour or two with a good ah addon, which would cut into my achievement grinding and pet battle time :P
