I know this varies from server to server but on majority of servers there has to be a certain combo or one profession that goes above all others to make you some nice gold. Herbs and minerals go for a good amount on my server, same with JC and Enchanting though so I'm not sure which is the easiest to level (besides gathering professions) and make the most.

I know that on my sever clothes and ores/bars sell for a lot on the AH but just as well it never seems like people buy them, go figure

This question is best answered not just server by server, but also by each faction on each server. I play both factions and I play on 4 servers. I spend a LOT of time examining economies, far too much if you check out my raid progress. :(
Some people say always go LW+skinner and tailor+ench or tailor+JC for a caster. Some dedicated PVP'ers might go for BS and JC on a plate wearer for the max level boosts.
I recommend this. IF you are starting new on a server or new to the game or new to an account, then you first need gold and not ways to spend gold. Crafting professions are invitations to buy materials to level faster. It is better to select gathering professions either for the boosts they provide, or for the (more importantly) gold their produce brings.
FYI, many people admit that they have forgotten a simple fact. Mining grants stamina, skinning grants critical bonus and herbalism grants herbal healing abilities that do not share cooldowns with bandages or spells and cost zero mana. On Trollbane ally side mining and skinning are solid money makers, though some metals sell in bar form and others in ore form. On the Horde side, the metals are even MORE profitable, the skinning less so, but herbs sell surprisingly well. Aerie Peak works in a similar pattern though metals are often poor moneymakers and the ores should be prospected for gems there.
The key is every market is different, and factions on a single server vary in pricing depending on the day of the week, the special events happening, patches released, etc.
SO, what is the SAFEST gold maker in WOW? Leveling is always the safest gold maker in WOW, but you should get REALLY big LW, herbalism and mining bags and dedicated gatherers to feed not only your own needs, but to make gold for you.
Tailoring requires so much cloth to level, you should either plan on farming a LOT, buying a lot of cloth in the AH, or waiting to make a tailor until you have 2-4 characters collecting cloth incidentally ahead of time. LW and BS are fairly easy to level and are solid gold makers while alchemy is not vastly profitable until you can start supplying raiders and PVP twinks. Engineering is FUN, but not profitable on any server except in the very LONG run.
Inscription takes an immense number of hours in the AH to make profits outside of the top tier items. (I leveled my scribe by BUYING all the herbs and staying in SW waiting on instance queues while playing the auction house and doing guild activities). Enchantment varies widely in profitability and generally levels slowly, BUT if you start early and feed your enchanter all the greens looted by several leveling toons, it is not too hard.
Sooo, probably your first crafting professions should be LW and BS + maybe Ench. If nothing else, get started on something for every toon early so you can do all the daily quests. You can always drop a profession or 3 later when you decide you do not need 3 miners and 3 skinners among your 8 alliance toons on one server. It is a little gut-wrenching the first time, but you get over it. :)
This guide has been written more for newer players and for players who maybe have not done much with professions.
For those top tier people who are accidentally reading this post, let me throw you a bone . . . When you start on a new server, put all your gathering professions on two toons, a druid and a worgen preferably (for their mobility and the worgen skinning boost). Equip the gatherers with GREY or possibly low level soulbound gloves with the GATHERER enchantment. (I prefer greys so I can mail them later). Use the Gnomish Army Knife to further boost your gatherers and load them with mega-big bags. At first city faction bags and a Darkmoon box +3 specific gathering bags might suffice. Later, get Embersilk bags at a minimum for these toons. You might take some loaded bank by server transferring 1 toon. I would take a set or two of heirlooms with me, a pile of gold and stacks of leveling mats that are somewhat hard to find.
