Gathering Professions:
HerbalismBonus:
. 480 haste for 20s per 2 min. Passive equivalent 80 haste.
Note: Also a very minor heal (720 to 2160).
Can be used with some cooldowns for more effect, but haste is usually less desirable than primary stats such as strength, agility, or intellect.
MiningBonus:
. 120 stamina.
Note: Useful for tanks or PvP. Some tanks, however, choose to focus on mastery or avoidance stats such as dodge or parry.

AlchemyBonus:
Mixology. 80 extra strength, agility, intellect, spirit or 120 stamina.
Note: You cannot gain spirit from
Flask of Battle from guild cauldrons (
Cauldron of Battle or
Big Cauldron of Battle).
Also gives doubled flask durations, which is more useful if you don't use guild cauldrons, since non-alchemists in your guild will need a new cauldron after the normal flask duration.
While not flasked, the alchemist can use
Flask of Enhancement to receive the profession bonus, as this item is non-consumable.
Minor perks: May craft the BoP items
Volatile Alchemist Stone,
Quicksilver Alchemist Stone,
Vibrant Alchemist Stone, and
Lifebound Alchemist Stone to make epic trinkets with a socket at skill level 500.
May also specialize in potions (via
Master of Potions), elixirs and flasks (via
Master of Elixirs), or transmutation (via
Master of Transmutation). This gives the alchemist a chance to produce bonus product when creating their specialization. Note that you may learn transmutation mastery and unlearn it for 150 gold, then learn any other mastery without having to do the quest by simply talking to the NPC that would give the quest. Some people prefer this method as Primal Might is now easier to obtain than in BC.
BlacksmithingBonus:

. 80 any stat or 120 stamina (100 any stat or 150 stamina with epic gems).
Note: This allows the blacksmith to put 2 extra gems into his gear. This is very flexible as it allows you to gain a bonus in any statistic you choose. This also provides the largest benefit of all professions if you are able to use epic gems.

Inscription of the Earth Prince. 80 bonus strength, agility, intellect, or 120 stamina.
Note: These inscriptions replace
Greater Inscription of Jagged Stone,
Greater Inscription of Shattered Crystal,
Greater Inscription of Charged Lodestone, or
Greater Inscription of Unbreakable Quartz to give the bonus listed.
Removes the need to grind
Therazane to exalted.
JewelcraftingBonus: 3 cut versions of
Chimera's Eye. 81 any stat or 123 stamina (or 51 any stat or 78 stamina, if replacing epic gems).
Note: Very flexible, and the highest bonus possible, although only very marginally, if not replacing epic gems. If replacing epic gems, this actually becomes the weakest bonus.
The downside is this profession bonus can depend on acquiring 3 appropriately colored gem sockets depending on if you choose to pursue socket bonuses. This is usually only a problem when first gearing up in heroic dungeons.

Figurine - Demon Panther,
Figurine - Jeweled Serpent,
Figurine - Dream Owl, and
Figurine - Earthen Guardian from smart loot world drops. Completing the quest (technically not crafting) requires some combination of smelted bars, raw rare-quality gems, and sometimes volatile earth. Note that the jewelcrafter must have a talent tree that matches the primary stat on the trinkets. For example shamans may craft the agility, intellect, and spirit trinkets due to enhancement, elemental, and restoration.

. 195 stamina at the cost of 50 dodge, hit, or expertise.
Note: This embossment replaces wrist enchants (
Major Strength,
Agility, or
Mighty Intellect) and the bonus listed is the difference between the enchants.
The best non-leatherworkers enchants to bracers are the previously listed 50 primary stat enchants, which are quite expensive. This saves you the cost of those enchants, which includes two Maelstrom Crystals, Hypnotic Dust, and Volatile Elements.
Tanks will replace
Superior Dodge,
Precision, or
Greater Haste. It should be noted that you gain more stamina this way but lose threat or avoidance stats. The item budget gained is the same, as stamina comes 50% higher than other stats.
Enchanting allows healers to gain
Exceptional Versatility, but there is no leatherworking-only spirit embossment. Most healers in raid gear prioritize intellect over spirit, anyway.

I don't have a 525 engineer but to my knowledge the boot enchants were taken out. Cogwheels can only be used in the engineer crafted helms, and they are balanced such that the total stat budget is the same. Its imaginable that the engineer helms are worse than tier or other epic helms as the cogwheel stats cannot be reforged. I'll include them after I get some more info on them, however.
Sorry to point out but Eng. Helms are currently BiS for alot of classes in the game. And its do to the different Cogwheels. My main is a Ret Pally. And this is the Tier Helm for her.
Reinforced Sapphirium Helmet no Ret Pallys are no different then other classes for one we don't want Haste on our gear. Its the lowest on the Stat Scale for us currently. With Mastery then Crit being the best stats after 8% soft cap hit and 26 exp are reached. With the Cogwheels it allows a classes to be more flexable. If I have my Soft caps reached then I would use a Mastery and Crit Cogwheels.
Also one thing that I would do for the Eng. Part is filter the Eng. Tinkers like this

Alchemists gain an additional 80 agi/str/int or 120 stamina over non alchemists when buffed by the cata flasks (assuming they can create it). So you have to be flasked to gain the bonus for mixology.
However, you can use the non-consumable (permanent) flask
Flask of Enhancement to gain the same bonus while not consuming a raid flask.
